paling, unagi, eel

Specifically, it is an european eel.

I think they are very cute.

When I arrive to amsterdam over 13 years ago, i saw duck caught paling at Amsterdam canal, and he was looking above and controlling it then swallowing directly to stomach.  I thought that was wild, and cool and still remember clearly.

I still haven’t mastered yet, but will keep trying it.  Japanese Kabayaki style need lots of practice, such as making fillet, put the stick through the meat, steaming, and creating proper fire, baking on grilled bbq, making a long taking time sauce….and this is just only concept, doing is again different thing.
